A Quick & Easy Vegan Dish in 3 Steps

I love cooking but as a mother of 3, I try to keep things quick and simple. Lately I’ve been trying to keep it a bit healthier. My recent go-to is a simple recipe; rice and veggies. To some might sound boring but it really isn’t, if you use the right veggies and add a little sauce / topping to it for extra taste, it’s super yummy. This meal is great if you’re vegan / vegetarian, busy running around after the kids, or just want to be healthy.  This is the most basic vegan dish I make. I’m going to…

A Few Pictures From My Week

I take so many pictures. Some of them make it to Instagram or Facebook but not a lot make it to my blog and there are many that only get looked at when I’m scrolling through my pictures. There is no point in them just sitting on my phone or laptop. I like sharing. So, I’m going to try to do a weekly picture roundup. This is my first one, so enjoy!   Sulky chops I’m not sure what Izzy was sulking at. Maybe it was the fact that I kept following her around with a camera. Cutie.   No…

A Letter to My Daughter, Abigail

Dear Abigail, You’re not even 9 months old yet and already I’m more proud of you than I ever could be. When you were born, you didn’t cry. The doctors were pinching your tiny feet and for a split second there, my heart stopped. I had you in my arms and I knew you were breathing but as a new mum all over again, I panicked. Then you started to cry and it took all my strength not to cry too. I just held you and spoke to you gently and kissed you. It was the best day of my…

My Recent Lifestyle and Fitness Changes

One of my new years resolutions was to get in the best shape I’ve ever been in and although I’ve got off to a slow as HECK this year, my fitness journey has finally kick started. In my post My Experience with the Contraceptive Implant I explain that I have put on some weight, rapidly. It’s left me feeling a bit discouraged and quite annoyed at myself, but I’m willing and ready to put the work in towards becoming a better version of myself. I’m currently 8 days into a 21 day habit change. Hopefully by the end, I won’t be craving…

The Middle Child

Abigail, my 8 month old, is the perfect addition to our family, but the day she was born, it mixed everything up like I thought it would and threw the dynamics of my little family off (no offence Abigail, we love you more than anything). Observing how everything switched gears with my son, who was originally the baby but is now the “middle child”, it can sometimes get to me. Jaxon is 4 years old and will be 5 in April. He was the baby for quite a few years. I wouldn’t say I have a favourite child, but he…
